We rescue fresh organic fruit peels that would otherwise go to waste and ferment them into tasty, healthy drinks. In the case of lemon and lime peel this leaves a product that is also improved and can be used in dishes.

We ferment in the traditional way with real cultures over many days, just like people have been doing for hundreds and even thousands of years. No shortcuts, or modified cultures. just real organic ingredients.

not sugar

The sugar is mostly fermented away, creating depth, natural bubbles and complex flavours and <0.2g/100ml of sugar. We use Demarera Sugar, which is less refined than most, retaining trace minerals such as Iron, Chromium, Calcium and Potassium. Not enough to meet your RDA but the cultures love it!
