Using abundent energy to make the tea
Kombucha needs green tea. Boiling tens of litres uses a significant amount of energy which adds to our overheads. In Utrecht, there is plentiful supply of solar energy from locally produced photovoltaic panels (PV) installed on locals roofs and from the Utrecht solar farm. Taking care to only boil this water on the days not only means we use low carbon energy, but we help the local grid which struggles to make use of all this cheap energy. As a result we even get paid for this. Anyone can make use of this cheap electricity and help Utrecht burn less gas.
